Breakfast Tacos

So, for my first recipe posting I don't have a photo (sorry). As you will see, I don't use precise amounts. this really hurts me in the world of science, but in cooking it's fine. One of the things I love. Anyway, here goes:

Breakfast Tacos with a Sweet Potato Hash
Serves 2 - 3

Ingredients
1 - 2 Sweet Potatoes
Onion Powder
Garlic Powder
Chili Powder
Salt
Pepper
Tabasco Sauce
Butter
Honey

Eggs

3 Flour Tortillas
Cheese

I started by cutting up the sweet potatoes into a fine dice. The smaller the pieces, the faster they'll cook. I seasoned them with the salt, pepper, garlic powder, onion powder, and chili powder. I then added them to a pan heated to medium high with about a tablespoon of butter. As they were cooking, I continued to add butter as needed so that they didn't burn from the heat of the pan. They weren't cooking as fast as I would have liked so when I added the last tablespoon of butter, I found a nice heavy skillet and placed it on top. Therefore, as the butter melted, the steam was trapped and circulated, steaming the potatoes and cooking them through. Once they were cooked through, I added some hot sauce and about a tablespoon to a tablespoon of a half of honey. This creates a sticky, glossy finish on the potatoes that make them look AWESOME!

For the eggs, I simply scrambled three eggs with hot sauce, salt and pepper. I cooked them a lot less than I normally do and the results were really wonderful. The eggs didn't get overcooked and were really fluffy (Something I usually don't get).

I have a trick for heating up tortillas. I wrap the tortillas in paper towels and then drip several drops of water onto the paper towels. I then microwave them for about 30 seconds. The water will evaporate and steam the tortillas instead of removing all the moisture by traditionally microwaving. (Interesting fact - I learned in high school physics that a microwave works by using electromagnetic waves. These waves are specifically vibrating at the same frequency as water molecules vibrate. Therefore, the microwaves create maximum interference with the water molecules, causing them to vibrate really fast and heat up. Thats how your cooking in a microwave :) )

I assembled my tacos by starting with the tortillas. I placed my cheese on the tortillas (I used american cause thats all I had. Cheddar would've probably been better) and then topped the cheese with the still warm potatoes. The potatoes were then topped with my eggs and then rolled. The heat from all the ingredients should melt the cheese and the result should be fantastic. Make sure not to overstuff the tortillas (like I did) because everything will fall out while you're trying to eat.

Overall, these tacos were great. I use this sweet potato hash on tons of things and as a side dish with tons of things. I usually add fresh onions and sometimes, when I'm feeling crazy, I'll add bacon and cook everything in bacon fat. Chipotles in Adobo also make a really amazing spicy addition to this. I look forward to updating this and next time I'll make sure to take photos.

Hello All,

So I finally decided to make this blog. I've had this idea for a while and I'm glad that I'm finally going through with it. This blog is a place for me to post photos and recipes for food I cook. I am going to use it as a photo scrapbook for myself. That way I can keep track of food I've made and others can look and enjoy. I also look forward to people making comments and reviews on what I've made. In all, I'm looking forward to sharing what I create with everyone.
